Fall 2026 Preview: What's Coming at Wholly Water Farms

Fall in Florida is like a reset button for the farm. After grinding through another brutal summer, September brings the first subtle shift in humidity, the light changes, and suddenly everything feels possible again. Fall 2026 at Wholly Water Farms is shaping up to be our biggest, most exciting season yet — and I wanted to share what is coming so you can plan ahead and be part of it.

If you have been following along since our early days, you know we have grown from a small operation into a real farm with real reach. Our three-year reflection covered how far we have come, and this fall marks the start of what I am calling our next chapter.

What New Microgreen Varieties Is Wholly Water Farms Growing This Fall?

We are adding four new varieties to our lineup this fall, each chosen based on customer requests, nutritional research, and my own obsessive taste testing:

Purple Vienna kohlrabi microgreens: These are stunning — deep purple stems with bright green cotyledons. The flavor is mild and sweet with a hint of broccoli. Nutritionally, kohlrabi microgreens are packed with glucosinolates and anthocyanins. I have been trialing them all summer and the consistency is excellent. Garnet amaranth microgreens: These made it onto our list because they tested as having the highest vitamin K levels among the 25 varieties analyzed in the landmark USDA microgreen study. Plus, they are absolutely gorgeous — deep magenta color that makes any plate pop. Our amaranth guide covers the variety in detail.

Sorrel microgreens: Tangy, lemony, and completely unique. Sorrel microgreens have a bright acidic flavor that works beautifully in salads, on fish, and as a garnish for soups. Several of our chef clients have been asking for these, and I am excited to finally offer them.

Cress microgreens: Peppery, fast-growing, and incredibly nutrient-dense. Cress is a classic microgreen that we somehow have not offered until now. They are ready to harvest in just 5 to 7 days, making them one of our fastest turnaround crops.

How Is the Farm Expanding Its Growing Capacity?

We are making two significant infrastructure investments this fall:

Second grow room build-out. Our original grow room, which I documented in building our grow room, has been running at full capacity for months. We are doubling our indoor growing space with a second dedicated room that will feature upgraded LED lighting (more efficient panels that I tested extensively — see our LED grow lights guide for the research behind our choices), improved air circulation, and a more efficient rack system.

This expansion means we will be able to take on new wholesale accounts, increase our farmers market inventory, and — most importantly — keep up with demand during peak season without sacrificing quality.

Outdoor growing area expansion. We are adding two new raised beds specifically for our Florida sandy soil growing trials and expanding our herb garden for fall plantings. Florida's fall growing season is genuinely spectacular — September through December is when we can grow almost anything, and I want to take full advantage.

What Community Events Are Planned for Fall 2026?

Community has always been at the heart of what we do, and this fall we are leaning into that more than ever:

Monthly farm tours (October, November, December): Open farm days on the second Saturday of each month from 9 AM to noon. Come see the grow rooms, taste fresh microgreens, learn about our growing methods, and ask questions. These are free and family-friendly. Kids especially love seeing the trays of tiny plants.

Microgreen growing workshops: We are hosting hands-on workshops where you plant your own tray of microgreens and take it home. Limited to 12 people per session for a truly hands-on experience. Dates and registration will be posted on our website in early October.

Farmers market schedule: We will be at our regular farmers markets every weekend through the fall season, with expanded offerings including our new varieties, seasonal herb bundles, and holiday gift options. Partnership with local restaurants: We are deepening our relationships with local chefs this fall and expanding our restaurant delivery program. What Is Changing with Our CSA Program?

Based on subscriber feedback, we are updating our CSA (Community Supported Agriculture) offerings for fall 2026:

Flexible box sizes: We are moving from a one-size-fits-all approach to two box options — a standard box for couples and small households, and a family box for larger households. Both include a rotating selection of microgreen varieties, seasonal herbs, and recipe cards.

Add-on options: Subscribers can add specialty items like our microgreen gift kits, microgreen growing kits (grow your own at home), and seasonal herb bundles.

Pickup and delivery: We are adding a second pickup location this fall based on where our subscribers live. We are also exploring a limited delivery option for subscribers within 15 miles of the farm.

What Am I Most Excited About This Fall?

Honestly? Everything. But if I had to pick one thing, it is the community events. Farming can be isolating work — long hours, early mornings, just you and the plants. The moments when I get to share what we do with real people, watch a kid taste a sunflower microgreen for the first time, or hear a customer say that our greens changed how they think about food — those are the moments that make it all worth it.

I am also excited about the new varieties. Testing new microgreen varieties is one of my favorite parts of this job. There is something magical about watching a new variety go from seed to first harvest and tasting it for the first time. Not every trial makes it to production (I have had my share of "well, that did not work" moments), but when one does, it is a great feeling.
